Collagen Breakfast Cookie
Prep Time: 30 minutes, Cook Time: 15 minutes
Servings: 22 cookies
- 1 cup all purpose flour
- 1/2 cup wholemeal flour
- 1 cup shredded wheat cereal
- 1/4 tsp baking soda 3-4 scoops of Vytal 360 Wild Marine Collagen
- 1/2 tsp salt 1 cup rolled oats
- 1.5 tsp vanilla essence
- 1/2 tsp ground cinnamon
- 3/4 cup coconut sugar
- 1/2 cup honey
- 200gm cold butter cut into cubes
- 2 large eggs, beaten & at room temp
- 1/2 cup cocoa nibs
Preheat oven to 180 degrees F.
Line 2 baking trays with baking paper and spray lightly with oil.
Add all dry ingredients into large bowl.
Break up wheat biscuits with fingers until there are no clumps. Mix until well combined.
In another bowl, whisk eggs until light and frothy add vanilla essence, and honey.
Add butter into dry ingredients and mix well with fingers until no clumps of butter are left. Slowly add egg and vanilla mixture while beating with a hand mixer on low/ medium until all ingredients are just combined.
Stir cocoa nibs through with a spoon.
Using a dessert spoon scoop a blob of the cookie dough and place onto baking tray.
Separate each portion of dough 2.5cm apart.
Bake in oven for 15-17 minutes on 2 trays. Rotate tray position in oven at 7.5mins.
Remove from oven and leave for 2 mins on tray, then place on wire racks to cool.
Tip: Store cookies in air tight containers also perfect for freezing. Best shared and enjoyed with your favourite cuppa!
